Ingredients
To create our Rondon with Seafood Medley, we use the finest ingredients:
- Seafood Medley:
- 1 lobster or 12 large shrimp, cleaned and deveined
- 8 scallops
- 2 sea bass fillets, cut into chunks
- Coconut Milk Base:
- 2 cans (800 ml) of coconut milk
- 1 cup of fish or seafood stock
- Vegetables and Aromatics:
- 2 large sweet potatoes, peeled and cubed
- 2 green plantains, peeled and sliced
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 scotch bonnet pepper, whole (for flavor, optional)
- 1 bunch of fresh cilantro, chopped
- 1 bunch of fresh thyme
- 2 bay leaves
- Salt and black pepper to taste
- Juice of 2 limes
- 2 tablespoons of coconut oil
- To Serve:
- Artisanal bread, sliced
Cooking Instructions
Prepare the Ingredients:
- Start by cleaning and cutting the lobster into pieces or cleaning and deveining the shrimp.
- Cut the sea bass fillets into chunks.
- Peel and cube the sweet potatoes and slice the green plantains.
- Chop the onion, garlic, and bell peppers.
- Squeeze the juice from the limes and set aside.
Cook the Aromatics and Vegetables:
- In a large pot or Dutch oven, heat the coconut oil over medium heat.
- Add the chopped onions, garlic, and bell peppers. Sauté until softened and fragrant, about 5 minutes.
- Add the cubed sweet potatoes and sliced plantains. Stir to combine.
Simmer the Stew:
- Pour in the coconut milk and fish stock. Stir to mix well.
- Add the whole scotch bonnet pepper (if using), chopped cilantro, thyme, and bay leaves.

- Remove the whole scotch bonnet pepper and bay leaves.
